Cooking has always been part of my story — from hotel kitchens to home recovery. Since my cataract surgeries, food has become more than fuel; it’s therapy, focus, and a reminder that independence comes in small, delicious steps.
Today’s dish is simple, fast, and full of flavor — a BLT wrap with horseradish and ginger, made to wake up the senses (and maybe your sinuses too).

1 chapatti or wrap

1 slice cooked bacon (or two if you’re hungry)

1 small tomato, sliced

A handful of lettuce, finely chopped

1 tsp horseradish sauce

1 tsp ginger puree (or fresh grated ginger if you prefer)

Lay your chapatti or wrap flat on a plate.

Spread horseradish and ginger evenly across the surface — this is your flavor base.

Layer the tomato slices down the center, then add the chopped lettuce.

Place the bacon on top.

Fold up the bottom of the wrap, tuck in the sides, and roll tightly like a Chinese pancake.

Slice in half or enjoy whole — best eaten warm, with a mug of decaf coffee.

Every meal like this is a milestone. After months of blurred vision, double images, and recovery setbacks, I can now cook, see clearly, and even enjoy the colors on my plate again.
