Air Fryer Pumpkin & Spring Onion Artisan Bread
An aromatic, golden loaf infused with sweet pumpkin, honey, and fresh spring onion greens, baked directly in your air fryer.
Ingredients
- 300g Wheat flour (Strong white bread flour works best)
- 100g Cooked pumpkin (mashed/puréed and cooled)
- 200ml Warm water (start with ~160ml–170ml and adjust as needed)
- 1 tsp Dried yeast
- 1 tsp Salt
- 1 tbsp Honey
- Handful Fresh spring onion greens (finely sliced)
- 1 tsp Garlic granules (optional for extra savoriness)
- Splash of vegetable/olive oil for the worktop
💡 RAF Chef Pro Tip: Hydration & Sugar Control
Pumpkin adds natural moisture to dough, so hold back about 30ml of water initially and add only if required. Because honey and pumpkin brown faster under air fryer elements, check at 30–35 minutes; cover loosely with a small sheet of tin foil if it's getting dark on top!
Step-by-Step Instructions
- Mix the Dough Base: In a large mixing bowl, combine flour, salt, yeast, honey, and mashed pumpkin. Slowly pour in warm water while bringing the dough together.
- Knead & Fold: Oil your counter lightly instead of flouring it. Knead for 8–10 minutes until elastic. Fold in the sliced spring onion greens during the last couple of minutes of kneading so they stay bright and vibrant.
- First Proof: Place dough in a greased bowl, cover, and let rise in a warm place for about 60 minutes until doubled in size.
- Shape for the Air Fryer: Knock back dough. Pull edges into the center and pinch tightly together dumpling-style to build surface tension. Lay seam-side down on an air fryer greaseproof liner (or inside a greased loaf tin).
- Bake: Transfer liner into your air fryer basket. Bake at 170°C for 40 minutes until the loaf is deep golden brown and sounds hollow when tapped on the bottom.
